Is stainless grating worth the extra cost over galvanised?

In hygienic, marine or strong-chemical service, yes — it never needs re-coating and resists chlorides (316). For general outdoor use, galvanised is more economical.

Does galvanised grating rust?

Not while the zinc lasts — decades inland. Eventually, in harsh or coastal environments, the zinc is consumed and stainless or FRP lasts longer.
